MICHAŁ SOWIŃSKI
Michał has worked with coffee at almost every stage of its journey — as a barista, trainer, judge, roaster, green coffee buyer and production manager. This experience allows him to see green coffee selection and roasting as one coherent process. At MAMAM, he is responsible for selecting green coffees, creating and developing roast profiles, and helping shape the direction of the roastery.
ALICJA BOROWA
Alicja has experience in hospitality management and organizing day-to-day operations. At MAMAM, she is responsible for customer contact and the smooth running of the roastery’s operations. She makes sure that orders, communication and ongoing processes run efficiently, and that customers can rely on clear and attentive service.
ADAM ROSOŁOWSKI
Adam is a Q Arabica Grader, barista trainer and coffee competition judge. He also ran Alternatywnie café in Szczecin for five years, so he knows coffee from both the roastery perspective and day-to-day work behind the bar. At MAMAM, he is responsible for quality control, production roasting and sensory evaluation. He also takes part in selecting green coffee and ensures the consistency of every roasted batch.
