Nearby lies the Kibira rainforest, part of the mountainous landscape that makes this corner of Kayanza particularly well suited to coffee cultivation.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eCoffee production here happens on an extraordinarily small scale. This makes the washing station an essential part of the coffee’s identity: rather than representing a single estate, Yandaro brings together cherries from many tiny farms and provides the infrastructure and expertise needed to sort, process and dry them.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eYandaro was established in the \u003cspan class=\"s1\"\u003emid-1980s\u003c\/span\u003e and today works with Greenco, which supports producers and washing stations throughout Kayanza with agronomy, quality control and processing expertise. The station has developed a strong reputation for coffees that combine the characteristic fruit and lively acidity of Burundi with exceptional sweetness.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWhat makes \u003cspan class=\"s1\"\u003ethis particular Yandaro lot especially interesting is the processing\u003c\/span\u003e. Burundi is much better known for fully washed coffees, while honey processing remains relatively uncommon. For a honey coffee, ripe cherries are depulped while leaving part of the fruit’s sticky mucilage around the seed. The coffee is then dried on raised beds, where careful and regular turning helps control fermentation and encourages even drying. Yandaro’s honey lots are described as particularly juicy, with \u003cspan class=\"s1\"\u003estone-fruit character and pronounced sweetness\u003c\/span\u003e.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAt the heart of the lot is \u003cspan class=\"s1\"\u003eRed Bourbon\u003c\/span\u003e, the variety most closely associated with Burundi’s specialty-coffee identity. The farm has been owned and operated by Ismael Hassen Aredo and his family since 2012 and stretches between the villages of Taro and Sewana.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe farm covers around 500 hectares, with approximately 300 hectares planted with coffee at elevations reaching 2,200 metres above sea level. The remaining land is largely preserved forest. Coffee grows under the shade of acacia and other indigenous trees, while an on-site nursery is used to cultivate both coffee seedlings and native shade trees.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eUnlike many Ethiopian coffees, which are produced by combining cherries from numerous smallholders at a central washing station, Kayon Mountain manages both growing and processing on the farm. Ismael works with around 25 permanent employees and more than 300 seasonal workers during harvest.
